Acorn Squash Quesadilla

I have always loved squash and see it as a quintessential fall food. I usually enjoy my squash in the same forms each fall either in soup, pasta, or just with a little butter and brown sugar. While these preparations are delicious, sometimes change can be good. So, when I purchased an acorn squash recently, I decided I wanted to find a new and different way to cook/prepare it. I ended up coming across this acorn squash quesadilla recipe and knew it was the change I had been looking for. The spice of the peppers and chiles perfectly compliment the sweetness of the squash and the addition of a crispy tortilla and gooey cheese finishes off the dish.
