Lemon Cookies

Ingredients for Cookies:
1 cup granulated sugar
1 cup powdered sugar
1 cup canola oil
1 cup butter softened
2 tablespoons lemon juice
2 tablespoons lemon zest
4 ¼ cup flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt

Ingredients for Frosting:
2 ½ cups powdered sugar
4 tablespoons lemon juice
Zest of one lemon

For Cookies:
Cream together first four ingredients: granulated sugar, powdered sugar, oil, and butter. Fold in the rest of the ingredients.  Refrigerate one hour.  Form walnut size balls and flattened with glass dipped in granulated sugar. Bake in a 375˚F preheated oven for 8 to 10 minutes. Let the cookies cool. After cookies have cooled, frost the cookies.  

For Frosting:
Combine all frosting ingredients. Frosting should be thin and runny. Apply liberally to the cooled cookies and let dry. 

Makes 3-4 dozen cookies. Enjoy!
