Red, White & Blue Mojitos

Red: Raspberry Mojito
5-6 mint leaves
4 organic raspberries
1/2 fresh squeezed lime
1 ounce White Rum
1 tablespoon simple syrup
3/4 ounce Raspberry Liqueur
Soda Water

1. In a highball glass, muddle fresh raspberries, mint, and lime juice.
2. Add rum, raspberry liqueur, and simple syrup
3. Fill glass with ice and top with soda water.
4. Garnish with lime wheel, a sprig of mint and couple whole raspberries.

Makes 1 mojito. Enjoy!

White: Coconut Mojito
2 ounces Coconut Rum
1/2 fresh squeezed lime
1 tablespoon simple syrup
5-6 mint leaves
Coconut Milk

1. In a highball glass, muddle the mint leaves with lime juice and simple syrup.
2. Add coconut rum and stir.
3. Fill the glass with ice and top with coconut milk.
4. Garnish with a sprig of mint.

Makes 1 mojito. Enjoy!

Blue: Blueberry Mojito
1 cup fresh blueberries, plus extra for garnish
4 oz clear rum
10 fresh mint leaves
2 teaspoons sugar
juice of 2 limes
6 oz club soda

1.In a food processor or blender, puree blueberries until smooth. Set aside.
2. Add mint leaves and sugar to a cocktail shaker. Use a muddler (or the end of a wooden spoon) to muddle the mint and sugar. Add the lime juice, rum and pureed blueberries: shake vigorously.
3. Pour ice and club soda into two tall glasses and then pour in rum mixture. Gently stir. Garnish with a lime wedge, extra blueberries and a sprig of mint.

Makes 2 Mojitos. Enjoy!
