4 eggs
2 cups milk
2 cups all-purpose flour
1 teaspoon salt

Heat oven to 450 F. Grease popover pan (or muffin pan) and place in the preheated oven to warm up. With a hand mixer, beat eggs slightly. Add milk, flour, and salt and beat just until smooth. Do not overbeat.

Remove warmed popover pan from oven. Fill each cup halfway full with batter. Bake for 25 minutes. Then, lower the oven temperature to 350 F and bake 15-20 minutes longer or until deep golden brown. Immediately remove from pan and serve warm.

Tip: Don't open the oven door until you are sure they are done. The cool air could cause them to collapse.

Makes 12 popovers. Enjoy!
